The pastry-counter Brisa is a low oblong bar of puff pastry coated with sweet egg cream and a thin sugar glaze. The glaze makes a pale, smooth, slightly translucent skin; yolk lends warmth beneath it while the laminated sides remain dry and crisp.

It should not be confused with Brisas do Lis. Those are small egg, sugar and almond cakes associated with Leiria; the Brisa documented by Fabrico Próprio belongs to the everyday puff-pastry family and is identified by its elongated form and glazed top.

History

Fabrico Próprio records Brisa as an archetype of Portuguese semi-industrial pastry and found references linking it to Leiria and Brisas do Lis. Its research concluded, however, that the two cakes do not share enough features to support that derivation. No verified creator, date or originating bakery has been published.

Historical caution matters here: a shared name does not make this puff pastry a version of Brisas do Lis. This entry preserves it as a distinct national counter cake, different in dough, form and finish.
