Bispo is a low puff-pastry rectangle topped with egg-yolk cream and shredded coconut or coconut paste. The topping is applied in parallel ridges and baked until toasted crests form, leaving the base’s golden laminations visible.
Its linear geometry distinguishes it from coconut tarts and cakes: there is no tall shell or enclosed filling. It is more frequent in Porto and northern Portugal, where it remains recognised as an individual fine pastry.
