  • 1 Egg
  • 50 g / 1.8 oz Melted butter

Method

  1. Place the egg in a large bowl with salt, orange juice and lard. Beat thoroughly.

  2. Add the small glass of medronho aguardente and beat a little more. Gradually incorporate the flour and melted butter, following the published list.

  3. When the dough begins to leave the bowl, knead and dust it with flour until it releases completely.

  4. Transfer to a stone or table and continue kneading and striking it for elasticity, occasionally greasing the surface with olive oil. Cut the dough: many bubbles inside indicate the published endpoint.

  5. Boil the sweet potatoes in their skins. Peel and purée them.

  6. Heat the sugar with a little water until it begins to reach road stage. Remove from the heat, add the purée, lemon zest and cinnamon and mix well.

  7. Return the filling to the heat until quite dry without burning. Leave to cool completely.

  8. Roll portions of dough as thin as possible, add small mounds of cold filling and cut around them with a pastry wheel.

  9. Fry in hot oil, drain and dust with sugar.
