Ingredients

- about 75 g / 2.6 oz Butter for the pastry
- 200 ml / 6.8 fl oz; use only as needed Water for the pastry

Method
Prepare the filling first. Heat the approximately 300 g sugar with a little water—quantity not stated—to pearl stage.
Add the blanched ground almonds and boil briefly. Add the cassava flour, stirring to prevent lumps, and cook.
Remove from the heat, allow to cool and add the 6 to 7 yolks. Return to the heat until it comes back to the boil, stirring. Cool the filling completely before use.
Mound the flour, make a well and add the 75 g butter, salt and only as much of the measured 200 ml water as needed. Work until the pastry can be rolled; the source gives no more precise endpoint.
Roll out the pastry, cut it into pieces and roll each portion very thinly.
Place cold filling on each portion, fold the pastry and cut into a crescent with a pastry wheel.
Fry in butter. The publication gives no temperature, duration or butter-management method; work carefully and remove when the pastry is cooked and golden.
Allow to cool and dust with finely pounded pilé sugar.
