Ingredients

  • 200 ml / 6.8 fl oz Water
  • 480 g / 16.9 oz Sugar
  • 480 g / 16.9 oz Ground almonds
  • 11; the source does not clarify the portion for brushing Egg yolks
  • 4; three for the paste and one for brushing Egg whites
  • 20 g / 0.7 oz Ground cinnamon
  • 20 g / 0.7 oz Wheat flour
  • As needed Wafer paper
  • As needed Egg threads

Method

  1. Heat the 480 g sugar with 200 ml water to thread stage, given by the source as 105°C / 221°F.

  2. Off the heat, add the almonds, yolks, three whites, cinnamon and flour. The source does not clarify whether part of the eleven yolks should be reserved for the final brushing.

  3. Return to the heat, stirring continuously, until the paste releases from the bottom of the pan. Transfer to a dish and leave to cool.

  4. Cut the wafer paper into circles about 6 cm / 2.4 in wide and arrange them on a parchment-lined tray.

  5. Cut the paste into circles of the same shape but slightly larger and brush them with the remaining white.

  6. Attach each wafer-paper circle to a paste circle.

  7. Place egg threads and small pieces of candied citron in the centre.

  8. Cover with another paste circle, press the edges and brush with beaten yolk. The source calls for this yolk but does not say whether it comes from the eleven listed or is additional.

  9. Bake at 200°C / 392°F for about 10 minutes.
