Almoster Convent Arrepiados — Municipal Formula

Ingredients
- 1 kg / 2.2 lb Shelled almonds
- 1 kg / 2.2 lb Sugar
- 1 teaspoon Cinnamon
- 8 Egg whites
Method
Lightly toast the almonds and cut them into very thin slices, following the method registered by the DGADR.
Whisk the egg whites to very stiff peaks.
Gradually beat in the sugar and cinnamon until the mixture is firm.
Carefully fold in the sliced almonds.
Place irregular mounds on a tray, preserving the peaks that give the sweet its name.
Bake in a very low oven. The municipal formula gives neither temperature nor duration, so monitor the bake rather than inventing exact values.
