Method
The day before, cook the 80 grams / 2.8 ounces of rice in 280 grams / 9.9 ounces of water until it breaks down into a purée. This pairing of quantities and method is a cross-source reconstruction; no public page confirms the time, heat, lid position or final texture.
Cook the 250 grams / 8.8 ounces of sugar to pearl stage and allow it to cool slightly. The method source publishes no syrup-water amount; Cookidoo lists only the 280 grams / 9.9 ounces already grouped with the rice. The reconstruction therefore cannot determine any additional water.
Add the rice purée to the syrup and return it to the heat until thickened. Add the 50 grams / 1.8 ounces of almonds and bring back to the boil. The sources do not define the almond grind, duration, temperature or endpoint.
Remove from the heat, incorporate the 5 yolks and return only until the mixture comes to the boil, stirring to reduce curdling. The traditional wording publishes no cooling protocol; apply modern food-safety controls and refrigerate.
The next day, work together the 360 grams / 12.7 ounces of flour, 90 grams / 3.2 ounces of butter, 75 grams / 2.6 ounces of sugar and 6 yolks, adding the warm water. The source does not define order, water temperature, duration or dough endpoint. Rest for 1 hour.
